Darina’s Lemon Squares

For a quick and easy squares that are delicious try these Lemon Squares. All you do is mix the ingredients, bake, and cover with a lemon glaze. They can keep for 3 weeks in a tin.

Ingredients

  • 6 Tbs. butter (3/4 stick) lemonsquare2-200x150
  • 1 cup sugar
  • 2 large eggs
  • 1-1/2 cups plus 2 Tbs. self-rising flour

Glaze:

  • 2 lemons
  • 1/2 cup plus 1 Tbs. sugar
  • fresh strawberries, whip cream and mint sprigs, optional

Directions

Preheat the oven to 350 degrees. Butter a 9-1/2 by 9-1/2 baking pan.
To make the squares, put the butter, sugar, eggs, and flour in the container of a food processor. Process for a few seconds until smooth. Spread the mixture evenly in the baking pan. Bake in the preheated oven until golden brown and well risen, 20 to 25 minutes. Let cool on a rack.

To make the glaze, first zest and juice the lemons. Put the zest and juice in a small saucepan with the remaining sugar. Pour the glaze over the cake and let cool. Cut into squares. Serve with fresh strawberries, whip cream and a mint sprig, if desired.
