Here you simply mix some rum and raisins into vanilla ice cream and sprinkle with crumbled cookies!
Let the ice cream soften at room temperature while you prepare the other ingredients.
Mince the raisins and soak them in the rum for at least 1 hour.
Whip the cream with a whisk in a metal bowl until it holds a definite shape. Fold the rum-raisin mixture and the Amaretti cookies into the whipped cream.
Gradually stir the whipped cream mixture into the ice cream. Spoon this into 6 pretty glasses or dessert dishes and place in the freezer until firm. Decorate with additional Amaretti crumbs.
